Grilled Piña Colada Parfait

With sweet grilled pineapple, a hint of lime and coconut ice cream, this tropical parfait is the perfect after-dinner dessert for summer entertaining.

 pineapple rings, about 1/2-inch thick

limes, halved

brown sugar
2 tbsp
coconut ice cream
2 cups
dark rum
1/2 cup
toasted coconut
1/4 cup
fresh cherries

Add 1 cup water to drip tray of your Kenyon Grill. Preheat grill for 5 to 9 minutes on medium.

Place pineapple rings on grill. Cover and grill for 2 to 3 minutes per side or until well marked. Meanwhile, place limes cut side down on grill; grill for 3 to 5 minutes or until well marked and juicy.

Cut pineapple into cubes; squeeze grilled limes over top. Toss with brown sugar until pineapple is well coated.

Layer half each of the pineapple and ice cream in 4 serving glasses. Repeat layers. Drizzle with rum; sprinkle with coconut and top each serving with cherry.

TIP

For a dairy-free dessert, use dairy-free coconut ice cream.

TIP

If cherries are not in season, substitute strawberries or raspberries.
