All-Day Breakfast Fry-Up

Yukon Gold potatoes, cut into 1-inch cubes
1 lbs
olive oil
2 tbsp
breakfast sausage, halved crosswise
8 links
sliced mushrooms
1/2 lbs
onion, sliced

everything bagel seasoning

cherry tomatoes
1 pint
packed baby spinach
2 cups
butter
1 tbsp
eggs

black pepper
1/4 tsp
finely chopped fresh chives

crumbled feta cheese (optional)
1/4 cup
ketchup
1/4 cup
liquid honey
1 tbsp
hot sauce
2 tbsp
sourdough or rye bread, toasted and buttered

Add potatoes to medium saucepan of salted water; bring to a boil using Boost function of Kenyon Induction Cooktop with Bridge. Reduce to medium-low heat and let simmer for 10 to 12 minutes or until potatoes are tender but with some resistance still in center. Drain.

Meanwhile, in small bowl, stir together ketchup, hot sauce and honey.

Using Bridge function, heat large skillet or griddle pan over both burners of cooktop set to medium-high heat. Drizzle with olive oil. Arrange blanched potatoes, breakfast sausages, mushrooms, onion and garlic in skillet. Season with everything bagel seasoning. Cook, stirring occasionally, for 8 to 10 minutes or until sausages and potatoes are starting to brown and mushrooms and onion are starting to soften. Add tomatoes and spinach and cook for 1 minute or until spinach is wilted. Remove from heat and transfer to platter.

In same skillet or griddle, melt butter. Crack eggs into skillet. Cook, covered, for 2 to 3 minutes or until egg whites are set and yolks are still runny (or cook to preferred doneness). Season with salt and pepper. Remove from heat and arrange on top of potato-sausage mixture. Garnish with chives and, if using, feta.

Serve breakfast with toasts and hot honey ketchup.

TIP

Substitute breakfast elements as desired for fry-up. Try slices of ham instead of sausage, make scrambled eggs instead of fried eggs, wilt kale instead of spinach, and sauté peppers instead of mushrooms.
